About usKikunae Ikeda, a professor at Tokyo Imperial University, discovered that the flavor of kombu dashi (broth) was distinct from sweet, sour, bitter, and salty tastes, and named it umami. The word comes from the combination of the terms umai (delicious) and mi (taste). It is a very particular flavor found in many of the foods we consume, and it can only be described with that word. Ajinomoto, or monosodium glutamate, is the quintessential product that tastes of umami and is primarily used in Asian cuisine. This is why this fifth taste has been given a Japanese name. The sensation it creates is velvety, primarily stimulating the back of the mouth. Umami is a flavor that also enhances the taste of other foods. For all these reasons, many establishments include 'Umami' in their name, making it essential to give it a 'surname' to differentiate it from the rest. Umami gastrobar & brunch is a beautiful establishment that opened just over a month ago at one of the most productive roundabouts in Aljarafe, the one at the entrance to Ciudad Expo in Mairena.
